fruit cake

Yesterday we celebrated S's birthday.  He's a big 7 year old now, and no longer a kid, he informs me. (he informs me of this change in status yearly, apparently he feels it bears repeating)

Since it was far too hot to bake, and my kids looove fruit anyway, I decided to make a cake based on some I had seen on Pinterest.  The kids helped.  And by helped, I mean they ate fruit while I made the cake.

The boy said he was glad he had such a healthy cake because he wanted some extra brain power.  He might need it for all the wishing he did.

Have a great weekend everyone.

  2. I hope he had a wonderful birthday. My mom used to make "cakes" like this during the summer, and chill it in the freezer before we (my sister, me, and atleast 3 of my cousins)would devower it.

  3. That look delicious. I'll let you know when my birthday is.....

When my kids were young, we had to reiterate every rule after their birthdays. They seemed to think that now that they were 4 (5, 6....), that the previous rules no longer applied. "Now that you are 5, doesn't mean that you can climb out on the roof any more than when you were 4." Yes, we had one that did.

When we heard him say "I'm being careful," we RAN to stop him doing whatever it was he was doing!

  9. How do you get the fruit to stay in place? I love the cake, I think I might have this for my birthday too! When I was a kid there were several years I had a cake that was a big puff sort of thing topped with ice cream and fruit, this reminds me of it. Summer is the best time for fruit.

  13. The timing of this is perfect! My buzz-cut, shirtless boy is turning 7 on July 6th. He wants a cookout party around the campfire in the backyard. We thought cake AND s'mores was too much, but there has to be some sort of cake, right? So, I was planning to stack the graham cracker, marshmallows and chocolate in the shape of a cake, and I guess stick the candles into the marshmallows on top? But then Charlie saw these pictures and if I could make it for his birthday. Much more colorful and so refreshing! Maybe I'll do both--we'll see, but I'm so glad to have this idea!
